Spelt Protein Brownie

Now Scott came home after making these and thought I went out and bought a ghirardelli chocolate box mix... so they are good and kind of addicting.


1 Scoop sun warrior or any protein powder ( you can also omit this and your brownie will only have 2 grams of protein)
1 cup Spelt ( or whole wheat or gluten free)
12 TBSP unsweetened cocoa
3/4 truvia baking blend...  you can use 1 cup for a more sweeter taste
1/4 cup apple sauce
1/2 cup earth balance vegan spread ( or butter)
3 flax eggs ( 1 tbsp flax with 3 tbsp water per egg)
1 tsp vanilla
1/2 cup walnuts ( you can omit)

preheat oven to 350

1.)Melt the earth balance with the cocoa and then add the sugar, take off heat. After its off the heat mix in the apple sauce


2.) Add the sun warrior, spelt, "eggs" and vanilla. Mix it well.

3.) Grease your pan ( I used a 9 by 9 pan)

4.  put the walnuts in the processor or crush them with a hard object ( that way you can take out some of her frustration. lol) and put it on top of the brownies

5.) bake it for 30 mins... Don't over bake or it won't be as fudge

Reuse it babe

Good afternoon ya'll

So I get kind of annoyed with advertisements for something new like every five mins, like why fix what you have, just buy a new one. I, like everyone else, love new things. I also love to reuse things that can be fixed to A) save money and b) to help the planet. 


We bought Connor a lot of his Thomas the tank engine stuff from consignment store's because they looked brand new and saved us up to 90% off the brand new one. We also do hand me downs in clothing for Connor and then we give it to one of Scott's friend's son. This isn't just good for your wallet its going for the environment. You are saving the energy of making something new, of the materials needed to make the product and whatever else needed to be for the product. 

Now I do not think everything should be reused. There are some things that definitely shouldn't, but be economical and save the environment. 

Instead of buying water bottles buy a brita pitcher
Use reusable bags at the grocery store
Some beauty brands  will let you hand in your old bottles of beauty products for a discount on a new product


Did you know that by eating less meat you helping the planet? The meat industry is the biggest offender of greenhouse gas emissions??? The meat and dairy farmers who keep over populating the cows for meat eaters who eat wayyy more than they should are the main cause for the ozone layer depletion. This is a fact there are plenty of websites that support this just look it up on google and you will find 100's maybe 1000's of links to websites. 


So if you don't want to give up meat, just maybe do a Meatless Monday and help save the environment! Buy local meat and dairy if you can. 


Everyone should buy local because it's definitely better for the environment and its better for you!!





Wednesday for us is farmers market day! We love farmers market day! I cannot wait for the the on Penn Ave to open the first week of June...

Answers baby


A is for age:  23 til the end of the month, Although I still feel like my 16 hahaha
B is for breakfast today: one vegan spelt brownie ( I'll be posting the recipe later) and a blueberry smoothie! Yummm, plus lots of water. 
C is for currently craving: currants, I got some in my Nature Box last month and have yet to use them... Maybe I will make some oat balls or something with them. 
D is for dinner tonight: vegetarian shepherd's pie... you can get the recipe in my menu for the week
E is for favorite type of exercise: dancing is definitely my favorite exercise, esp dancing to offspring fly for a white guy with Connor.... Tooooo cute. We love 90's pop hits on pandora. 

F is for an irrational fear: every time I am putting something down the garbage disposal that its going to magically turn on, on its own and get my hand... 
G is for gross food:] cottage cheese, I just can't stand it

Random 10

Good Evening Everyone... Today has been quite enjoyable and stressful all that the same time. I just have sooo much on my mind. The next 3 years are going to be jam packed, but I think in the end it will all be worth it and all of our hard work will pay off...  I decided to do a 10 random things today Hope you enjoy





1. For dinner we had Quinoa "Spaghetti" and meatless balls
2. Transferring to another college is beyond stressful!

3. I have to write an essay about my mom tonight, to turn in tomorrow. This is not going to be easy at all.

4. I love hemp granola, it's beyond addictive. I could sit there and eat the entire bag ( I won't of course.... flexing my self control muscle hahaha)

5. Connor just loves to run around the house yelling and squealing.... esp when my nerves are shot.

6.  He was SUCH a good boy today at College, He loves it there!

7. I need to go to the library to get another book.  I'm lost when I have nothing to read.

8. Its very stressful to go out to eat when you are vegetarian. Omg it takes forever to pick a place and then to figure out what you are eating! AHHHHHHH

9. We went to Texas Roadhouse of all places but I love their sweet potatoes and steamed vegggg


10. Its sooo weird to think of my friend as a teacher who is teaching in my old homeroom.


Makes me feel soooo old and we aren't old but its just weird...

Menu For the Week

Monday

Meatless balls and pasta

2 cups green lentils
1 package mushrooms
1 yellow onion
2 cloves of garlic minced
2 T olive oil
1 t thyme
3/4 cup nutritional yeast
1 cup ground flax seed
1/4 cup spelt
salt and peper
3 cups vegetable stock ( I buy organic veg bullion)

cook lentils for about 20 mins in the stock and onion. Then sauté the mushrooms with the garlic and the thyme in the olive oil. In food processor add all the ingredients except for the spelt and a little bit of the lentil mixture. After procession it add the extra lentil in a bowl with everything from the food processor and then add spelt 1 T at a time.

Either use marinara sauce or make  your own

Sheppard's Pie

vegetarian gravy ( I make everything from scratch you can buy mixes)
8 yukon gold potatoes( chopped)
2 tbsp earth balance(vegan)
1/4 cup unsweetened unflavored coconut milk
salt and pepper
1 yellow onion, thinly sliced
1 tbsp olive oil
1 1/2 cups TVP( 10 mins in hot water soaked)
2 cups Mixed veg ( corn, peas, carrots, green beans)
garlic to taste

boil potatoes, then put them in a bowl and mash milk, earth balance, and garlic. Mix TVP, veg and gravy together and put the potatoes on top.

Work it baby

Hello All! 

We went to the works yesterday! So much fun! I don't have much time to write today so I figured I'd put up some pictures of yesterday... We're going to a movie in a little bit, but after that I'm going to try to create a new recipe so if it turns out well it'll be up later =)
