Menu For the Week

Monday

Meatless balls and pasta

2 cups green lentils
1 package mushrooms
1 yellow onion
2 cloves of garlic minced
2 T olive oil
1 t thyme
3/4 cup nutritional yeast
1 cup ground flax seed
1/4 cup spelt
salt and peper
3 cups vegetable stock ( I buy organic veg bullion)

cook lentils for about 20 mins in the stock and onion. Then sauté the mushrooms with the garlic and the thyme in the olive oil. In food processor add all the ingredients except for the spelt and a little bit of the lentil mixture. After procession it add the extra lentil in a bowl with everything from the food processor and then add spelt 1 T at a time.

Either use marinara sauce or make  your own


Tuesday


Sheppard's Pie

vegetarian gravy ( I make everything from scratch you can buy mixes)
8 yukon gold potatoes( chopped)
2 tbsp earth balance(vegan)
1/4 cup unsweetened unflavored coconut milk
salt and pepper
1 yellow onion, thinly sliced
1 tbsp olive oil
1 1/2 cups TVP( 10 mins in hot water soaked)
2 cups Mixed veg ( corn, peas, carrots, green beans)
garlic to taste

boil potatoes, then put them in a bowl and mash milk, earth balance, and garlic. Mix TVP, veg and gravy together and put the potatoes on top.

I make our own whole wheat dough and with diya mozz cheese we put garlic and broccoli with kale pesto on it, and of course a regular cheese and sauce pizza yum

We went to the works yesterday! So much fun! I don't have much time to write today so I figured I'd put up some pictures of yesterday... We're going to a movie in a little bit, but after that I'm going to try to create a new recipe so if it turns out well it'll be up later =)

Snobby joe

Good Afternoon!!

We took this morning to story time! Connor loves the library, mostly because he gets to get in trouble  play with his friends. lol We of course had a good time! Came home and went for a long walk with Scott, Connor and Shelby!

Came home and tried Bunny dogs but we definitely didn't like them. YUCK they tasted like vinegar ( I may have just put too much vinegar in the marinade).

Instead we had some delicious peanut butter and strawberry Jam(grape for connor).


I was just cutting up pineapple and honey dew and on the labels they say no fat and good for the heart. I worked in produce for a little bit and I always thought it was funny when it said FAT FREE on baby carrots. Of course they are fat free!!! lol. I find this ridiculous, but most american's and people in general don't eat enough produce and farmers/ manufacturers of these products have to write these things on the label to get people to eat them. Its amazing!



Anywho we had snobby joes, Roasted asparagus and sweet potato fries for dinner. Connor had 2 plates full so I think it was definitely a good recipe! So very tasty!

Chopped Hair

So I wasn't home all day! We woke up this morning had a cup of coffee and some soy yogurt with a yummy pear. Connor and I then went to the gym and spent 40 mins doing cardio - 20 mins doing fat burn on the elliptical cross trainer, and 20 mins walking on the treadmill at 4.5 incline and 3.4 speed. Then I spent 40 mins lifting my legs, then stretched and ab exercises.


After a fun 2 hours at the gym Connor and I were sooo hungry. Scott had a banana coconut oatmeal bake for us when we got home SOOOO yummy!

Banana Oatmeal bake

1.5 cups unsweetned coconut milk
1t vanilla
1t cinnamon
1 mashed banana
1 cut up banana
2 cups of rolled oats
1t baking powder
pinch sea salt
2 scoops protein protein powder
1/2 cup unsweetened coconut
(then some extra on top)
1 flax egg 1 tablespoon ground flax seed and 3 tablespoon water

Mix all wet ingredients together and then all dry ingredients.

Scott didn't take a picture but it was yummy!

Connor and I ate and Scott went to work. Connor then went to watch a movie in my room while I took a quick shower. While washing my hair I got soooo fed up with my hair and decided to call Outlooks for hair to get a hair cut. We then got ready to go and left!


I chopped off 10 inches of hair and donated them to locks of love!


We then ate some broccoli pizza! YUMMMMM! We walked the mall and of course had to stop and watch the water fountain! Its Connor's favorite part of the mall, he could spend the entire day there staring at it. hahahaha

Well I'm about to put Connor to bed so Good night world!

I hope everyone is having a good day!

Every Wednesday we go to the farmers market. I try to buy all of our food at the farmers market, because it's a lot cheaper and we can literally walk there. Its always a fun time with my family buying our fruits and veggies. We always get some coffee and Connor normally gets a soft pretzel. Its always a good time. 

Today we got Artichokes, Cauliflower, Canary honey dew, watermelon, organic brussel sprouts, organic asparagus, organic granny smith apples, garlic, NuStevia, Bay leaves, organic Cornmeal,and unsweetened coconut.

Fitnessista has a thing this month about having a smoothie a day this month. So we all had a yummy colada smoothie with my favorite protein powder, sun warrior. I really want to try hemp protein powder, I hear its amazing and I really want to try it.

I made cauiflower chowder for dinner tonight. 

We spent the afternoon pulling weeds, walking the dog, and playing in the sand box, now its time to eat dinner and head to the gym! 


Sometimes you have to open your eyes instead of living in your ideals, because what you get is probably better than you could ever imagine <3


Love you to the moon

I love waking up in the morning and Connor crawling into our bed and the whole family having a snugglefest, even though I really should be going to the farmers market and the gym.

When I was little that was my saying the my aunt pickle Debbie. I now say it to Connor. My aunt used to make it a competition as I remember and be like I love you to the end of the universe and back and keep then I would of course have to top her. I'm going to start that with Connor when he gets the concept of distance.

Today is going to be a walking the dog and Connor for my cardio and pumping some iron while Con man plays with his friends at the Gym. I love lifting weights, the next day I'm sooo sore and I love that feeling especially in my abs.
